Gadre is one of the leading manufacturers and exporters of Surimi in India, and the third largest in the world. Originated in Japan, Surimi literally means “ground paste” – a paste made from fish meat. Manufacturing of Surimi had started in many areas of east Asia. Currently, 2–3 million tons of fish from around the world, amounting to 2–3 percent of the world fisheries’ supply, are used for the production of surimi and surimi-based products. Thailand has become an important producer today. The most common Surimi product in the western market is imitation crab meat – Crab Sticks. They are basically sold as seafood sticks, also one of the most popular products manufactured at Gadre.

So, how is Surimi made? Once the fish is unloaded, the ice is separated, and the fish are stored in layers in large bins. It is stored here for about 10 – 12 hours without any change of temperature before it gets into processing (washing, descaling, mean separator). The only thing that remains is the fish meat (prime part of fish) devoid of any fats and cytoplasmic proteins. This is stored in freezers with shelf life of about a year. Surimi consists of fish proteins that are refined through heading, gutting and mincing the fish, then washing, removing water, and freezing the remaining protein. Good quality surimi is odorless and has a creamy white appearance. Surimi has some really amazing gelling properties, hence, can be moulded into any shape.

Surimi being a very useful ingredient for producing various kinds of processed foods, it allows a manufacturer to imitate the texture and taste of a more expensive seafood, such as lobster tail, using a relatively low-cost material. Surimi is used in various types of cuisines such as Asian, Chinese, etc.
